Melanie has been working as a pâtissier at 5-star hotels since 2009, after several years as an à la carte chef. She joined Sofitel Gold Coast Broadbeach in 2019, and has regularly been recognised among Australia’s top pastry chefs.

“My first and greatest inspiration was my mum, who is an amazing baker! I inherited her creativity, and I often work with visual artists to create edible sculptures. While the buffet boasts a delicious carvery, pizza, curry and salad spread, it’s their seafood section that has us going back for more. Think fresh grilled QLD barramundi, garlic prawns with spaghetti, sushi, QLD spanner crabs, smoked salmon and mussels. The seafood buffet will set you back $50 for lunch and $75 for dinner.
